well i just ordered the CHOCOLATE....about 800 pounds! going to try to pick it up on thurs.
so the TRUFFLE season has began......the chocolate was about .30 cents per pound more expensive this year...but i don't think i'll raise the price of the truffles or pretzels, have to see what the rest of the ingredients cost. if the average is more than a $1.00 i'll have to up the price but will try not to. but next year they will go up again...sorry.
so for those that just buy chocolate the cost will be:
dark chips-$5.00/lb
milk chips-$5.50/lb
white chips-$6.00/lb
dark or milk blocks $5.00/lb

for Truffles:
large box/24 pieces-$34
small box/15 pieces-$24

for Pretzels dipped in home make caramel than dark or milk choc/10 pieces-$18

for Twizzlers dipped in dark or milk choc/12 pieces-$12

for Bark mint with white choc/ $10
for Bark with mixed nuts and dried fruit/ $12

i'm getting the cravings just writing this......

so the family will be here the 1st of Dec and the chocolate fun will begin.
the yummy product will be ready after the 7th.

think of all those on your Christmas list....you know chocolate always wins.

so i figured out why i don't post anything....i hate it...it always go in wrong and take me way to long to do it....
pics of some of the cake and things i've been doing this summer....fun but busy.








so it has been a long time since i have posted anything....i did a lot of wedding cake this year. Started with Sams in Jan, than Hannah's was in may, Kaitlyn was in june i think, Christian and Colbys in Aug, and Nate's in Sept. i could of forgotten someone, sorry.
of course they were all mostly choc...Hannah's had a great coconut layer with a coconut white choc ganche in the center...plus a dark choc glaze over the whole thing.
did a layer with mint ganche and another layer with rasp for Christian and Colby.
Nate we did a cherry layer...needed to be a bit more stronge in the flavor of the cherry ganche but it was good.
will start truffles right after thanksgiving so i can go to utah for when erin has the baby.....we are excited for that one...

been a busy valentines and 2 wedding cakes, they turned out great




did over 50 bags of pretzels and made some great truffles, key lime and peanut butter being some of the flavors i do for valentines.








the cakes were very good, the one for Laura was for her open house and it was the chocolate with rasp in one layer and the next tier was choc with orange ganche, then the top was just choc.








the other cake was for Chelsea, she wanted choc w/rasp on the bottom tier, and the next tier was coconut with coconut ganche with white choc. then their top was a mix of the choc and coconut. was very good. her colors were black and a teal so she wanted the black on the cake. i used dark choc and piped it on parchment paper. Deb L help with the design and piping.




might do something like it for Hannah.
